Spicy Moroccan-Spiced Smoked Wings With Tagine inspired sauce. Thanks @EnakFlavors for letting experiment a little with the Moroccan blend. Traditional tagine, a warm, aromatic North African stew with familiar ingredients (tomato, garlic, onion, lemon, coriander, paprika, pepper, clove, etc) and proteins seared, then simmered in a savory broth. I went fusion: Seasoned the wings with ENAK’s new spicy Moroccan blend, grilled over coals with a hint of cherry wood then glazed them in a tagine-style sauce (onion, garlic, green olives, tomato, lemon, raisins & spices)

Finding decent cherry wood has been tough recently so I resorted to the method I was originally shown. Soaked chips over hot coals. Not a method I see on here much.

@jay_ryewhiskey @v224info Chips are a last resort thing for me. I’ve tried a few different ways to extend their effectiveness but chunks would’ve been so much better. I was really hoping to use my offset today and not the grill.. it’s been a while.

I’ve been striking out on most woods lately, but cherry is typically my go to for most cooks. Wife prefers it, so I don’t mind a little sacrifice if it means I can fire up the grill or smoker. What’s up with the woods? I resorted to hardware store cherry chips in their bbq section, but logs are getting hard to get. Even looked on Amazon as a last ditch effort and struck out there too.
